Traditional absinthe is prepared by pouring an ounce of absinthe into an absinthe glass, then placing the absinthe spoon on top of the glass and a sugar cube atop the spoon. Ice water is then slowly dripped onto the piece of sugar using a carafe. The cool sugar water falls into the absinthe glass, releasing essential oils that fill the air with the aroma of fennel, anise, and wormwood. As the water and anise combine, the mixture also starts to take on its classic milky white hue.
